I love this time of year....

because I can preserve food for my family for the upcoming year. Today I canned tuna fish. I got 25 lbs of tuna fillets today.

60 half pints and 1 pint canned tuna! Only 36 are pictured here. This was the first batch. The rest are in the canner when the picture was taken.

Good work Candace! I have canned chicken and beef a lot. I like to get a big sirloin roast on sale and have the butcher cut it up like stew meat for me (that's free) and then can it. I also like to do it for chicken breasts when they are on sale. It's always great to cooked meat on hand for quick soups or casseroles or enchiladas or whatever.

I think this was in 2004. It was Nephi's first trip to the beach. The boys were all so little! My have they grown.

It all started for us when Russell left for Cape Town South Africa on a mission. Candace felt inspired to write him - so she did! We wrote for 3 1/2 years. Candace came home from her mission to the Texas Houston East Mission and we dated for 5 months. We married in July 1994 and have been happy ever after!
